This quick and easy to prepare squash casserole is vegetarian friendly and makes a wonderful, delicious meal.  For more substance and extra nutrition, you can add some whole grain brown rice.  The squash provides an excellent source of antioxidant vitamins C and A through carotenoids including beta-carotene.  For more information, check out squash and cabbage  at the foods page.

For this recipe you'll need:
One yellow summer squash
One zucchini
Cabbage
Cheese
Fresh pepper, basil and garlic

In an oven-safe skillet, heat a cup of water on medium high heat. Add black pepper, fresh or dried basil, and garlic to taste. Line the pan with one yellow summer squash and one zucchini sliced. Add half a head of shredded cabbage. Season further as needed and drizzle with olive oil, turning ingredients in the pan while the cabbage wilts down and the squash becomes tender. Cover with mozzarella cheese and place under the broiler for 5 minutes or until cheese becomes golden brown and bubbly.
