Mushroom Stir-fry Return to Recipes

This delicious vegetable stir-fry can be made with just mushrooms and spinach, or it can be made with whole grain pasta or rice to create a hearty dinner.
You'll Need:
Fresh Mushrooms
Fresh Spinach
Garlic
Salt
Pepper
Whole Grain Pasta or Rice
1. To shred spinach, remove stems and stack leaves

2. Roll the leaves tightly like a cigar and hold firmly |

|
|
3. Slice into thin ribbons to shred

4. Slice mushrooms to desired thickness
 |
|
|
|
|
|
|
|
|
|
|
|
|
|
5. Add mushrooms to the pan and season with salt and pepper
 |
|
|
|
6. Add spinach and allow everything to cook until water evaporates
 |
|
|
|
7. Add more water and pasta or rice. Stir to combine until most of the liquid has been cooked out
 |
|
|
|
8. Sprinkle with a dusting of Parmesan cheese and stir to combine before serving.
