This classic cornbread dressing is tasty, colorful and nutritious.  Try it for your next holiday gathering!  You will need the following ingredients:

1  cup diced celery

1/2  cup melted butter

5  large kale or spinach leaves, chopped

Large loaf of cornbread

1/4 cup cranberries, either dried or fresh

3  tablespoons chopped fresh sage

2  large eggs, lightly beaten

2  cups chicken broth

Cook celery in butter in a large skillet over medium heat until tender, stirring occasionally. Add kale or spinach and allow to wilt before removing from heat. Coarsely crumble Cornbread into a large bowl. Add kale and butter mixture; stir well. Add remaining ingredients and stir to moisten dry ingredients as desired. Spoon dressing into a baking dish and bake uncovered at 325° for 1 hour or until top begins to brown.
