This salad is sweet, crunchy, and tangy. It is best dressed with a balsamic vinaigrette or red wine vinegar, which accents the flavor of the red grapes. The sweetness of the red bell pepper and grapes balances the bitterness of the broccoli perfectly. This salad is packed with beautiful color, which translates into tons of nutrition. You can make this for lunch or dinner, either alone, or alongside a nice piece of fish or chicken for protein. It's easy to make, too.


For this salad, you'll need:
1-2 cups of fresh spinach
a small section of broccoli,
a 2-3 inch section of cucumber
6-7 baby carrots
1/4 of a large red bell pepper
6-10 red grapes
olive oil, balsamic vinaigrette, and a sprinkle of cheddar cheese for garnish

1. Wash the spinach in cool water, shake leaves dry and place in the bottom of a large bowl.








2. Cut cucumber to section lengthwise. When it is sliced, the pieces will fall into perfect half-moons.








3. Slice the cucumber and scatter the crescent-shaped pieces  on top of the spinach.







4. Add the baby carrots either whole or broken in half. Slice  grapes and scatter onto the salad.
 








 

















5. Next, slice broccoli florets into bite-sized pieces.








6. Cut along the lobes just until you feel resistance.









7. Pull the sections apart gently and remove the seeds.








8. Slice one section of the pepper  to desired size.





























9. Dress salad with balsamic vinaigrette and olive oil.









10. Top with sharp cheddar cheese, and enjoy!
