pancakes have been a staple in my home ever since I was a little girl.
Honestly, on most days I can take them or leave them, but now and then
I really enjoy a nice stack drizzled in some fresh maple syrup or
topped with some lovely fruit.
My husband on the other hand, loves pancakes. He enjoys having them on
a regular basis and when we go out to breakfast, it's the only thing he
ever orders. One day I wondered, "Is there a low-fat pancake mix that
makes good pancakes?" A few days later I was grocery shopping and
found Bisquick HeartSmart. It was just what I was looking for. We've
been eating it for years now, and I've never had (or heard ) any
complaints. The pancakes are great, easy to cook and the lower fat
content is an added benefit. I appreciate the ease of the mix. All I
have to do is add milk and an egg, whisk it for a minute and it's ready
to go. I have noticed the batter can be a little on the thin side.
Although it has no effect on the quality of pancake, if you prefer a
thicker batter just let it sit for a few minutes and it will thicken up.
I use a
non-stick skillet and I'm able to cook without any oil whatsoever.
With the burner on low, the pancake cooks quickly. Almost as soon as
I've finished pouring out the batter and rotating the pan to spread it
out a little, the tell-tale bubbles popping up on the surface let me
know it's safe to turn. I gently slip a thin spatula underneath, make
sure it's loosened from the pan, quickly flip it and it's ready to go
on the other side.

The
other side cooks up just as quickly. Rising like a balloon from the
inside out, once the inflation hits it maximum velocity, I know it's
done. It comes off the heat and shrinks back to normal size while
waiting on the pancake plate for all of its friends to finish cooking.
In just a few minutes, we have a full stack to share and we're feasting
like breakfast royalty! |
